Queso Napolitano

Ingredients

Preparation

1  can (14 oz.)  sweetened condensed milk

1  can (12 oz.)  evaporated milk

5  whole  eggs

1  teaspoon   vanilla extract

     

GLAZE/SYRUP:

3/4  cup   sugar

Few drops of lemon juice

1. Preheat oven to 350 F degrees. Butter bottom of a 2 qts. oven proof round baking dish, metal or glass . For single servings butter  8 (4" diameter) flan dishes and double the amount of syrup.

2. If using  glass dish  place in warm water for few minutes before pouring syrup into it to prevent cracking.

3. Place sugar and lemon drops in a skillet to caramelized at medium temperature, stirring occasionally until melted and caramel color. Do not over cook or it will taste bitter. Pour into prepared baking dish, tilt to coat bottom and sides completely.

4. Place remaining ingredients in the blender. Blend until well incorporated. Pour over caramelized dish.

5. Place flan dish in a larger baking pan. Pour hot water into pan halfway up sides of baking dish.

6. Bake in oven at 350 F degrees for about 1 hour or until center feels no longer liquid. 7. Remove flan dish from water bath and cool in rack. Refrigerate for several hours before serving.

8. To serve, run a knife around the edge. Place flan dish in a bath of hot water for few minutes to loosen the caramel. Invert in serving plate. Scrape all the sauce from dish and spoon over flan.

 

VARIATIONS:


Traditional Flan: replace filling ingredients with ingredients below, proceed as previous recipe. Bake @ 325 F degrees for 1 1/2 hrs.

1 can (14 oz.) sweetened condensed milk

1 can (5 oz.) evaporated milk

1 cup whipping cream

4 whole eggs

2 egg yolks

1 cinnamon stick  (add to blended mixture)

 

Pineapple Flan: add to Flan recipe, this time mixing ingredients by hand. Bake @ 325 F degrees for 1 1/4 hrs.

1 pkg. (8 oz.) cream cheese, softened

1 egg ( for a total of 6 eggs)

1 can (8 oz.) crushed pineapple, drained.

 

Lemon Flan:  To Flan recipe, OMIT: sweetened condensed milk and evaporated milk, ADD ingredients below. Bake at 325 F degrees for 1 1/4 hrs.

3/4 cup sugar

1 egg ( for a total of 6 eggs)

1/4 tsp. salt

2 Tbs. grated lemon peel

1 1/2 cups of Half-and-Half

1/2 cup toasted, sliced Almonds ( to sprinkle after inverted)

1/2 cup Rum  ( to pour and ignite before serving)
